Roasted Red Pepper Walnut Dip

Ingredients
• 2 cups walnuts (can be soaked for one hour to soften them)
• 1 12-14 oz. jar roasted red peppers, drained
• 2 tbsp. olive oil
• 2 tsp. lemon juice
• ½ tsp. cumin
• 1 clove garlic, chopped
• Salt and pepper to taste

Instructions
1. Add walnuts, cumin and salt to food processor and pulse till finely ground.
2. Add peppers, garlic, olive oil, and lemon juice. Process till smooth.
3. Serve with sliced bell pepper, carrots, cucumber.
