Butternut Squash Latkes

Ingredients
• 4 cups butternut squash, peeled and grated
• 1 small onion, peeled and grated
• 3 large eggs, whisked
• Olive oil or coconut oil for frying

Instructions
1. In a large bowl make latke batter by mixing together squash, onion and eggs.
2. Use your hands to form batter into 3-inch patties.
3. In a large skillet, heat oil.
4. Fry patties on each side over medium heat until golden brown and crispy.
5. Remove latkes from pan. Place on a paper towel or cooling rack to drain excess oil.
6. Repeat steps 2-4 until batter is used up.
7. Serve with applesauce, sour cream or yogurt.

Applesauce - Ingredients
• 12 medium apples, peeled, cored, and sliced
• 2 sticks cinnamon

Applesauce - Instructions
1. Preheat oven to 350F.
2. Place apples and cinnamon in a large glass bowl with lid.
3. Bake, covered, for 60-90 minutes until apples are soft.
4. Allow to cool slightly, remove cinnamon sticks, then crush apples with a potato masher until desired consistency.
5. Serve over latkes, yogurt, or enjoy on its own.
